- 1/3 cup olive oil
- 2 Tbsp fresh garlic, chopped
- 1 cup onion, diced
- 1 lb medium shrimp, peeled and deveined
- 1/4 cup vodka
- 1/4 cup dry white wine, such as chardonnay
- 1 cup fresh basil tightly packed, finely chopped
- 4 cups plum tomatoes, peeled and finely chopped
- 1 1/2 cups heavy cream
- 3/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1/2 cup bias sliced green onions, for garnish
