Fiesta Rotini

Cook Time:15 Min.
Serves: 4-6
Ingredients:

13.25 ounces Heartland Whole Wheat Rotini
3 tablespoon olive oil
4 cloves of garlic, minced
1 medium onion, chopped
1 large zucchini, diced
1/3 cup pepperoncini peppers, chopped
2 tablespoon chili powder
14.5 oz can diced tomatoes with diced green chilies, undrained
1/2 cup pitted black olives, chopped
Grated Parmesan cheese as desired

Directions:

Cook pasta according to package directions.  Meanwhile, in a large skillet, heat oil over medium heat,  Sauté garlic and onions.  Add zucchini and peppers, cook 5 minutes or until vegetables are tender-crisp, stirring occasionally.  Add the chili powder, tomatoes with diced chilies and olives; bring to a boil.  Reduce heat to low.  Simmer uncovered 10 minutes, stirring frequently, until mixture thickens.  Add pasta to vegetables.  Mix well.  Sprinkle with Parmesan cheese, if desired.  Serve immediately.
